In a large baking dish, combine chopped tomatoes, lentils, potato cubes, vegetable stock, honey and "Hello Souflaki" seasoning mix. Season with sugar, salt and pepper, then spread evenly across the bottom of the baking dish. (For 4 people, it is best to use 2 baking dishes.)

Spread the aubergine slices on half of a baking tray lined with baking paper. Drizzle with olive oil and season with salt and pepper. Bake at 220 °C (top/bottom heat) for about 20 minutes until slightly softened. (Use a whole baking tray for 3 or 4 people.)

Mix cream cheese and "Hello Nutmeg" seasoning mix smoothly with hot water. Cut the tomato into 2 cm cubes. Halve the romaine lettuce heart, remove the core and slice into strips.
