Mini Meatballs with Chili Mayonnaise and Vegetable Salad
Small meatballs with spicy chili mayonnaise and fresh vegetable salad made from carrots, cucumbers and radishes – a delicious and easy dish for 2 to 4 people.

- 50 g sweet chili sauce
- 2 pieces lime, washed
- 4 pieces carrot
- 2 pieces cucumber
- 20 g coriander/mint mix
- 600 g mixed minced meat
- 136 ml mayonnaise
- 300 g radishes
- 15 ml sriracha
- 2 pieces stone oven baguette
- 2 tbsp sugar (for the dressing)
- 0 salt (to taste)
- 0 pepper (to taste)
- 2 tbsp oil (for frying)
Wash the lime with hot water and zest the peel. In a large bowl, knead the minced meat with 1 tsp (for 2 people), 1.5 tsp (3 people) or 2 tsp (4 people) lime zest, sweet chili sauce, some salt and pepper. Form 12 (2 people), 18 (3 people) or 24 (4 people) mini meatballs from the mixture and refrigerate briefly.

Peel the carrots and slice into thin long strips. Cut the cucumber into thin slices. Coarsely grate the radishes. Pick the mint leaves and chop finely. Halve the lime.

Squeeze the lime into a large bowl and mix with 1 tbsp (2 servings), 1 tbsp (3 servings) or 2 tbsp (4 servings) sugar and remaining lime zest to make a dressing. Add cucumber slices, carrot strips, grated radishes and chopped mint, stir and let marinate. (let the dressing marinate)

Bake the bread in the oven for 5-8 minutes until crispy. In a small bowl, mix the mayonnaise with sriracha sauce. Season to taste with salt and pepper. (bake bread in the oven)

Heat 1 tbsp (2 servings), 1.5 tbsp (3 servings) or 2 tbsp (4 servings) oil in a large pan over medium heat. Add the mini meatballs to the pan, press them slightly flat and fry for 3-4 minutes per side until the meat is cooked through. Meanwhile, halve the bread vertically, cut open the bread halves (not all the way through) and spread with chili mayonnaise. (press mini meatballs flat for even cooking)

Top the bread halves with cucumber slices and arrange mini meatballs on top. Top with carrot and radishes and add coriander to taste. Fold the bread together and enjoy with the remaining salad. (Tip: Coriander has a distinctive taste, try it before using it.)
