Vegetable Salmon with Leek and Lentils
A delicious dish with carrots, celery, leek, chilli, and lentils, served with salmon. Easy to prepare and perfect for 2-4 people.

- 2 pieces Carrot (Peel the carrot and cut into small cubes.)
- 2 pieces Celery sticks (Dice the celery.)
- 2 pieces Leek (Cut the leek into 0.5 cm wide rings.)
- 1 pieces Red chilli (Chilli is hot, halve, remove seeds, and cut into fine pieces.)
- 20 g Chives/Thyme (Pick thyme leaves and roughly chop, cut chives into fine rings.)
- 400 g Brown lentils
- 500 g Cooking cream (Add cream to the vegetables.)
- 500 g Salmon fillet (Season salmon and bake.)
- 8 g Vegetable stock (Vegetable stock powder for the sauce.)
- 0 to taste Salt* (To season the vegetables and the sauce.)
- 0 to taste Pepper* (For seasoning.)
- 2 tbsp Oil (For frying the vegetables and seasoning the salmon fillets.)
Peel the carrot. Cut carrot and celery stick into small cubes. Slice leek into 0.5 cm rings. Halve chilli lengthwise, remove seeds and cut chilli halves into fine pieces. (Caution: hot!)

Pick leaves from thyme and roughly chop. Cut chives into fine rings.

Heat 1 tbsp oil in a large pan over medium heat. Add carrot and celery cubes, leek rings, chilli pieces (caution: hot!), chopped thyme and chives to the pan and fry for 8-12 minutes until the vegetables are soft. Season with salt. (Vegetables must be soft.)

Season salmon fillets with salt, pepper and 1 tbsp oil. Bake salmon on a baking tray lined with baking paper in a preheated oven at 220°C top/bottom heat (200°C fan) for 12-14 minutes until the fish is no longer translucent inside. (Preheat oven.)

Rinse lentils in a sieve under cold water until the water runs clear. Add lentils to the vegetables. Add vegetable stock powder and cream to vegetables and bring to the boil again until the sauce is creamy and thickened. Season with salt and pepper.

Serve creamy leek vegetables on plates, arrange salmon on top and enjoy.
